Description
The Escolinas Estate is a steep hillside with excellent exposure, cultivated on terraces along the banks of the Narcea River, which moderates the temperature. The soils are gravelly and are cultivated with organic fertilization, very low yields per vine, and hand-harvesting. The Carrasquín grape, used to make this Escolinas Carrasquín, is a variety brought to Cangas by the Benedictine monks in the 11th century when they settled in the Corias Monastery. A late-ripening variety, its resistant skin makes it ideal for cultivation in northern Asturias. It also imparts tannins and acidity to the wines. The wine comes from a selection of vineyards with a southeast exposure. It is vinified in 5,000-liter tanks with wild yeasts and aged in used French oak barrels, followed by further bottle aging.
